Chinese Water Kettle

This glass kettle from Northwest Glass Designs is the choice of many teamasters. The temperature of the water can be determined by the size of the air bubbles. It is stovetop safe (medium high heat) and dishwasher safe. A wire grid is included for electric elements. The wire grid is not necessary for glass or solid cook tops. The stylish handle is made of wood. Capacity is 40 ounces.
James Norwood Pratt reminds us that the Chinese distinguish five stages of tea water as the boiling point is approached: shrimp eyes, the first tiny bubbles that start to appear on the surface of the kettle water; crab eyes, the secondary, larger bubbles; then fish eyes, followed by rope of pearls, and finally raging torrent [rolling boil]. Green teas require fish eyes or cooler. Black teas mostly need raging torrent.
