A collection of tea themes and recipes with tables settings, tea etiquette, tea accoutrements, the history of afternoon tea and over 120 recipes from 25 years of teaching and lecturing about The Art of English Tea. The author, Dolores Snyder, is past president of Les Dames d'Escoffier International and founder of the Dallas Chapter, she directed a cooking and wine tour to France for Neiman Marcus, and was the food expect on an Earthwatch expedition to China. She will be lecturing about tea on the Queen Mary2 in December 2004.
From traditional scones, sticky nut and fruit breads, lemon curd tarts, buttery shortbread and sponge cakes are included as well as more modern fairy tea sandwiches, angel food delight, and tea-flavored dishes. Color photographs illustrate the ambience of the Victorian, Queen's, Fairy, Christmas, Bastille Day Picnic, Garden Party and Floral Tea menus with the proper tea to accompany the meal.
