About Zisun

Dry Leaves Long skinny leaves are comprised of a long bud and a leaf. Most good tea is one bud and two leaves, so when a tea is one bud and one leaf you can be assured of great quality.
Liquor The liquor of Zisun is a very pale green, there is little to color the hot water.
Aroma Subtle vegetal aromas waft up from the cup.
Caffeine Level Caffeinated
Body Light in body, and somewhat astringent from the elevated levels of the antioxidant EGCG.
Flavors This is a satisfying light green tea. It has a light, sweet vegetal flavor that reminds us of green beans fresh off the vine.
Brewing Time 2 to 3 minutes
Brewing Temperature 175°
Our Review
Zisun region is in the northwestern corner of Zhejiang Province, not too far the all-important Yangtze River. So this area has a long history of supplying teas the Emperor and his followers. Originally, the ancients’ teas from here were made into cakes. At the start of the Ming Dynasty over 600 years, the new Emperor declared that the tea cakes were being used as a form of money and were corrupting his people. So the teamakers switched to the leaf tea that we so enjoy. And this was among the first regions to make this new type of tea. The current form of Zisun is very different from the tea made all those centuries ago. The tea is fixed and fired without the use of much charcoal, so this allows the flavors of the tea to come out, rather than being overshadowed by the smoky flavors of charcoal. This tea reminds of us spring because of its sweet and refreshing qualities.
