Description

Before the main tea season gets into full gear, master tea makers prepare for tea contests later in the year. They gather the best young tea leaves by hand so that they retain the great qualities of amino acids and the highest amount of EGCG antioxidants. These are carefully processed and then stored until the contest in September. This one did very well, and that is why it is called Master's Mark. It is an honor to offer this special sencha.

The Japanese palate is subtle. Senchas have many similar flavor characteristics as steamed vegetables, but there can be significant differences. Master's Mark Sencha is desired by knowledgeable Japanese tea drinkers because of the mixture of delicate sweetness with hints of the pronounced vegetal flavors found in teas that come from Wazuka Valley.

Ingredients

Green tea.

Details: This special sencha is made by Koudai Hata in the Wazuka Valley (just like Matsuda's Sencha). He is considered to be a young genius tea farmer. In fact, his name in Japanese means "Vast Field."
Dry Leaves: The leaves are small but more complete than most senchas. That is because this award-winning tea was made from young leaves that have been handpicked (very rare in Japan).
Liquor: Being made from young leaves that have been hand-picked, the liquor is pale green.
Aroma: This sencha is more delicate and subtle than most. The vegetal notes are lighter and more haunting.
Flavors: Subtle spinach and nori flavors.
 Caffeine Level: Caffeinated
 Body: Light-bodied
Brewing Time: 1 to 3 minutes
 Brewing Temp: 175º
