Happy to bring this green tea back. Our supplier, VeeVee, is based in Huoshan in northern Anhui Province, so she gets the pick of the litter. She says the operative words with this tea are “Tan Fang,” which we translate as “Chill.” So when they wither it, they go slowly allowing the tea to naturally change to a bit of yellow, then they slowly shape it and bake it 3 times allowing the roast flavors to develop.
