This tea was created over a decade ago, when we did a line of four organic blends. The rules for being “certified” organic had just been developed by the US Department of Agriculture. One of the few tea estates that was certified for green tea at the time was the south Indian Korakundah estate. So we chose that estate. Then we added citrus to complement the bright flavors of that estate. And to give it something special we added Ginkgo, although we cannot remember why.
