Matcha comes from Uji, Japan.
Aroma: The aromas are faint and only discernible from the broth. They offer hints of honeydew melon sweetness over a base note of cooked spinach. Since it comes from air-dried teas, there are no notes of toastiness.

1. Measure 2 heaping scoops with a bamboo scoop or 1 teaspoon of matcha powder and add to a bowl.

2. Pour 4 ounces of 175 degree water, whisk the water until it froths.

3. Be careful not to scrape the bottom of the bowl, and to keep your whisk as vertical as possible.

Matcha Latte
1. In a small bowl, whisk together matcha powder and hot water using a matcha whisk or milk frother until no lumps remain (if you don't have either of these, blend matcha and hot water in a blender).

2. Pour matcha over glass of ice.

3. Top up with cold milk of choice, sweeten if desired, mix and enjoy!

Description

Our Organic Matcha comes from the southern island of Kyushu in the area around Kagoshima, Japan. It is a certified organic blend by the USDA. It is harvested in the early spring and thus has high levels of umami, though not as high as our Jobetsugi and other ceremonial grades. Organic Matcha can be consumed by itself or as a latte. Iced or hot—your call!

     Details: Matcha powdered green tea has been the pride of Uji, Japan, for several centuries. Recently, Kagoshima, Japan, has developed shaded organic tea fields specifically for matcha production.
     Dry Leaves: This tea is made from a raw tea called Tencha that is air dried, then dried flakes are ground between two stones, just like centuries ago. The result is a fine powder that is almost neon green.
     Liquor: The liquor is made by dissolving the tea powder into water. There is no brewing like with other teas. You drink the leaf! The liquor is thick and frothy from the mixing. It is an opaque brilliant green color.
     Aroma: This certified organic matcha has light notes of melon and lettuce.
     Flavors: This spring harvest tea has good levels of amino acids that create casaba melon flavors tempered by light vegetal notes of spring lettuce.
     Caffeine Level: Caffeinated
     Body: Being organic, the amino acid levels are lower than conventional matchas (Jobetsugi), but there are still nice levels of mouth-filling umami. That comes from it being harvested during the peak season.
