Description

Lung Ching is to Chinese green teas what Champagne is to sparkling wine: the name others measure themselves against. The original Dragon Well gardens sit on the hillsides outside Hangzhou in Zhejiang province, and this tea comes from Meijiawu, one of the four historically recognized villages in that region, on the far side of the hill from the famous well that gave the style its name.

For years, we have sourced tea from Mr. Zhao at Meijiawu. His factory sits at the top of the hill, with tea plants terraced around it on all sides. This harvest was made just before Qing Ming, the peak of the spring season and the most prized picking window in the Lung Ching calendar, when high amino acid levels give the tea its depth and natural character. When provenance matters, knowing exactly where your Lung Ching was grown and who made it is worth something.

Details: Lung Ching means "Dragon Well," which refers to an old well halfway up a hill outside of Hangzhou in Zhejiang province, where the tea was originally grown. This tea comes from a village on the other side of the hill, called Meijia Wu. For the last few years, Mr. Zhao has made our Lung Ching. His house and tea factory are up the hill, with hills of tea plants just outside. This year, we chose a tea that had a great body and lovely sweetness, indicative of great levels of amino acids. It was made just before the Qing Ming Festival, the peak season.
Dry Leaves: The flat, narrow leaf is stiff and smooth, with a spear-like shape about an inch long. Though it looks like a single flat needle, the unit actually comprises two leaves and a bud joined at the stem.
 Liquor: Pale yellowish green.
Aroma: Steamed bok choy and toasted walnuts, with top notes of sweet spring grass.
Flavors: The delicious meatiness of roasted eggplant with similar steamed bok choy and toasted walnut flavors.
 Caffeine Level: Caffeinated
 Body: Light-bodied
Brewing Time: 2 to 3 minutes
 Brewing Temp: 175º
