Top Ti Quan Yin

Ti Quan Yin, sometimes called Iron Goddess of Mercy, is one of China's most celebrated oolong cultivars, and this is the finest example we found in northern Fujian Province this year. The name honors a Fujian legend, and the cultivar has anchored the region's oolong tradition for generations. Each spring, growers pick and process only the best leaves, rolling them tight so they unfurl slowly and give up their character in stages. That careful hand is what separates a good Ti Quan Yin from a great one. This batch stands with the great ones, which is why we call it our Top. Re-steep the leaves several times; the cultivar rewards a second and third round, opening a little further with each.
