Ti Quan Yins are some of China's most famous teas. They are from Southern Fujian Province, and it was in these hills that teas were first rolled into small balls. That allowed the teas to slowly oxidize and slowly develop these great flavors.

Details: Ti Quan Yin Spring Floral is delicious. We searched through all of Anxi to find a Chinese oolong tea that captures the high floral notes with a satisfying body yet isn't too expensive. Its tiny greenish balls can be re-brewed several times.

Dry Leaves: Light and dark green rolled leaves.

Liquor: This tea brews a very light, green-yellow color that is very clear.

Aroma: The scent of this tea is of lightly toasted almonds, honey, and butter combined.

Flavors: A lovely oolong with enduring flavors of honey, butter, and almonds.

Where it grows

Anxi, where tea was first rolled

Ti Quan Yin comes from the hills of Anxi, in southern Fujian, and those hills are where tea was first rolled into small tight balls. That shape is the whole point. It lets the leaf oxidize slowly. Parts of the leaves are slowly degraded and recombine into the flavors that we love. These tiny green pellets open up over several infusions instead of giving everything at once. The name means Iron Goddess of Mercy. The honey, butter, and almond notes come from the rolling and the care in the making, not from anything added.

Every single-origin tea we list is chosen the same way, at our tasting table. Anxi makes a great deal of tea at every price, and the celebrated names climb fast, so the work is not finding a good Ti Quan Yin. It is finding the one worth carrying under its own name.
