Description
Chai is a spiced black tea, an Indian black base blended with cardamom, cinnamon, nutmeg, cloves, and a touch of vanilla. It brews strong and warming, sweet spice up front and a body full enough to stand up to milk and sugar the way a good chai should.
We built it for the classic preparation, a splash of milk and a little sweetener, though it holds its own poured plain. Unlike many Indian chai recipes, we leave out the peppers, so the cardamom and cinnamon lead instead of the heat.

A lot of chais lean on peppery heat to feel authentic, but I wanted the spice here to read as warm and sweet, not sharp. So we started with a strong Indian black base and let cardamom, cinnamon, and a little vanilla carry it, which is exactly why it takes so well to milk. They say every mother has her own recipe. So any complaints must be addressed to my mom!

How to Enjoy It
Chai is bold and unmistakably spiced, which is exactly what you want under a splash of milk. Here is how we make it when we want it at its best.
Water
Start with fresh spring or filtered water. It's nearly everything in the cup, and even a tea this bold takes on whatever's in the tap.
Hot
With its black tea base, you'll want to use boiling water (212ºF). Steep 5 minutes so the cardamom and cinnamon have room to come forward.
- 1 sachet per 12 oz mug
- 1 teabag per 8 oz cup
- 1 teaspoon loose (2.5 g) per 8 oz cup
Iced
Brew it double strength, twice the tea for the same water, then pour straight over a tall glass of ice. It holds its spice as it dilutes instead of washing out, and it takes a splash of milk over ice just as well as it does hot.
